Learn about the ancestral traditions of Xochimilco through a boat ride into the canals to experience the chinampas (a Mexican artificial garden recreated by piling soil dredged from the bottom of a lake onto a mat of twigs and planting thereon) and to be able to cook while focusing on environmental preservation. As part of our activities, we will harvest the ingredients that will be used in preparing our dishes. Once we gather the ingredients, we will prepare an appetizer that will be accompanied by a traditional Mexican drink. This experience will be guided by traditional cooks from Xochimilco who will explain the history and the importance of the chinampas to ancient and present Mexico.
